What you need:

  • 1 1/2 cups rolled or quick oats
  • 2/3 cup natural peanut butter
  • 3 tablespoons honey or maple syrup

Place the oats in a blender or food processor. Pulse until the oats reach a flour consistency. Add the pb and honey/maple syrup to the blender and blend until ingredients are well-combined. Scoop mixture into a bowl. You may need to scrape the sides of the blender to get all of the mixture.

Form “dough” into round bites. If they’re falling apart, return to blender and add 1 tablespoon of pb. If they start sticking to your hands, oil with cooking spray. Serve as is or refrigerated.

To make the base, stir together the graham cracker crumbs, peanut butter and powdered sugar in a mixing bowl until well-combined. Press the mixture evenly on a 9×13 inch baking pan lined with parchment paper. Set aside.

To make the topping, add the milk chocolate chips and peanut butter in a microwave-safe bowl and melt in the microwave in short, 20-second bursts, until smooth. Pour the mixture over the base in the pan and smoothen using a spatula. Chill in the refrigerator for 1 hour or until set. Slice into squares and serve!
